Here is a picture of our ward's Relief Society at our end of the year picnic we had a couple of weeks ago. We have quite a few families moving out of our ward this year, including a couple of good friends of mine, so it is kind of a sad time of year. One good friend of mine left with her family for Utah yesterday, sniff! Anyway, of course there are a lot more women in our ward than in this picture, but this is who was here that night. We had a really nice party with yummy sandwiches and salads and of course dessert! Here are a couple of recipes for the delicious wraps we had that night:
6 slices of bacon, cooked and crumbled 1 10-oz. package frozen chopped spinach, thawed and squeezed dry 6 oz. cream cheese, room temp 1/4 C Mayo 1/2 t pepper 1/2 C green onions, chopped 3 large flour tortillas
Thoroughly combine all ingredients and spread 1/3 on each tortilla. Roll up tightly and place in ziploc bags and chill 1-4 hours until mixture is set. Preheat oven to 400 degrees. Slice roll-ups into 1&1/2 inch pieces. Place on cookie sheet and heat in oven for 7-10 minutes or until heated through.
1 8-oz. package cream cheese, at room temp 1/4 C very finely sliced scallions 1/4 t salt 1/4 t pepper 2 flour tortillas, regular or whole wheat 1 red bell pepper, thinly sliced 1 English cucumber, thinly sliced 2 red leaf lettuce leaves
Mix cream cheese, scallions, salt and pepper in bowl until combined. Spread 1/2 of cream cheese mixture evenly on each tortilla. Layer with 1/2 of vegetables and roll up, and repeat with other tortilla. Chill until ready to serve and slice before serving.
